The classic Guyanese breakfast – bake & saltfish with a hot cup of green tea.
Cooking Directions
Whole Wheat Bake (8 – 10 bakes)
Ingredients:
- 3 cups of self-rising flour
- 1/2 cup whole wheat flour
- 1 table spoon of butter
- quarter tea-spoon of salt
- 1 table spoon sugar (or less if you don’t want to make it too sweet)
- oil to fry – enough to keep the bake afloat in the pan
Cooking Steps:
- mix all ingredients together
- knead into a dough with water
- cover with a kitchen towel and leave to stand for about 10 – 15 minutes
- divide dough into about 10 pieces
- roll each ball into a 4-5 inches diameter
- fry in hot oil until golden brown on both side (giving each side about a minute to fry)
Salt Fish
Ingredients:
- 1 lb boneless salted fish
- 2 eschallot
- 1 medium onion
- 2 wiri wiri pepper
- 1 teaspoon fine thyme
- 2 tablespoon oil for frying saltfsh
- 2-3 medium red tomatoes
Cooking Steps
- Wash and prepare saltfish for cooking
- Add saltfish to a pot of boiling water and let it boil for about 10 minutes
- Drain saltfish, rinse and repeat boiling process for another 10-15 minutes
- Drain saltfish, rinse and transfer to a mixing bowl
- Flake saltfish with a fork
- Chop onions, peppers, eschallot and diced the tomatoes
- Heat a frying pan with 2 tablespoon oil to medium heat, add onions, peppers and tomatoes and fry for about 1-2 minutes
- Add saltfish and let it cook for about 6-8 minutes. Turning frequently
- Sprinkle chopped eschallot and remove from heat
