Fudge: Creamy, Milky Sweetness – Guyanese Style!

Craving something sweet? Soothe it with some sweet, milky fudge. Fudge is a type of sugar candy that is normally made with three basic ingredients – sugar, butter and milk. The mixture is then heated and mixed until it obtains a soft, creamy consistency. To elevate this treat, fruits, nuts, chocolate, caramel, candies, sweets and other flavours are added. Origin Of Fudge

The delicious, sweet treat known as Fudge, originated in the United States of America in the late 1880s. It is believed to be introduced by a student at Vassar College in Poughkeepsie, New York. She sold batches of thirty (30) pounds in 1888. Fudge soon become popular and a recipe was published in The Sun 1895. It was described as Vassar Chocolates but contained no cocoa at the time. Word of this popular confectionery spread to other women’s colleges. The Wellesley College and Smith College is in possession of a fudge recipe dating from the late 19th or early 20th century. Fudge-making soon evolved to a wide variety of flavours and additives. Fudge became popular outside of colleges and has since spread to countries around the world like Guyana.

Making Fudge – Guyanese Style

Guyanese Vanilla Fudge

Ingredients:

  • 1 1/2 cups milk (evaporated or made with powdered milk and water) 
  • 1 ½ cups sugar
  •  ½ tbsp mixed essence
  •  1 tbsp margarine

Method:

  1. Add milk, and sugar to a pan and allow to boil.
  2. Add mixed essence and stir.
  3. After a while the mixture will begin to thicken. When this happens, reduce the heat to its lowest.
  4. Add margarine and stir.
  5. After about 20 minutes, the mixture will thicken.
  6. Remove from stove and pour into a flat dish.
  7. Allow to cool and cut into squares.
  8. Enjoy!

Tips For Making The Perfect Fudge

  • Test if your mixture is ready by dropping into a glass of water. If it remains together it is ready!
  • Using a wide, flat pot or make will help the mixture cook faster.
  • Before boiling, ensure the sugar has completely dissolved.
  • Keep an eye on the mixture at all times.

Guyanese Chocolate Fudge

Ingredients:

  • 1 1/2 cups milk (evaporated or made with powdered milk and water) 
  • 1 ½ cups sugar
  •  ½ tbsp mixed essence
  •  1 tbsp margarine
  • 3  tbsp cocoa powder

Method:

  1. The first step is to sift the cocoa powder into the sugar.
  2. Next, melt the butter in a pan.
  3. Add milk, and cocoa mixture to the pan.
  4. Stir until sugar is completely dissolved.
  5. After the sugar has dissolved, boil for about 45 minutes, stirring occasionally.
  6. Add essence and stir as the mixture thickens.
  7. Remove from heat and pour into a flat bottomed dish.
  8. Allow to cool and cut into squares before serving.

Fudge In Guyana

Many in Guyana enjoy eating fudge, even though it is a bit tricky to make, most have mastered the skill in making it. Fudges are also sold at local shops, supermarkets and Stabroek Market if you feel to just buy them. Many would recall buying fudges in their school days at their school canteens, yes those were the best, cheap fudges ever. Kids love it just as much as the adults crave it.
