Guyana’s cuisine have been influenced by the British along the other groups of people that live in Guyana. Cheese Scones are a dish of the United Kingdom but has been introduced to Guyana, Now it is served at many events and parties here in Guyana. It is often accompanied by other appetizers like cheese roll, pine tarts, Chinese cake, butterflaps, patties, cheese straws.  Cheesy Scones are a simple, savoury dish sure to satisfy the taste-buds of hungry people.

What is Cheese Scone?

A Cheese Scone is a small, baked bread made of flour, cheese and milk. It is biscuit-like, light and often shaped like cupcakes. Cheese scones are typically olden brown and flaky on the outside. The are soft and buttery on the inside and when topped with a bit of butter, this taste is amplified.

Generally, scones can be sweet and contain dates, raisins or currants however Cheese Scones are savoury and like the name suggests are made with cheese.  Cheese Scones  cane be eaten alone, smothered in butter or served with soups. they are the perfect breakfast, snack or appetizers!

Cheese Scones – Guyanese Style

Ingredients

  • baking powder
  • 1/4 tsp bicarbonate of soda
  • 2 oz cheese, grated
  • 1/2 tsp cream of tartar or 1 tsp
  • 1/2 tsp dry mustard
  • 4 oz flour
  • 1 oz margarine
  • 1/4 tsp salt
  • 4 tbsp milk

Optional: beaten egg to glaze

Method

  1. Mix together flour, cream of tartar and soda.
  2. Rub in fat.
  3. Add cheese,salt, some pepper and the mustard and mix into a soft dough with the
    milk.
  4. Knead on a flour-covered surface and pat into shape about 1/2-3/4 inch thick.
  5. Shape into circles and place on a greased baking sheet.
  6. Glaze scones with beaten egg or milk.
  7. Bake in a hot oven, 450 degrees, for about ten (10) minutes until golden brown.
  8. Serve warm with a dab of butter!

Coronation Chicken Scone

Ingredients

  • 1 tsp baking powder
  • 140g cold butter, chopped into small pieces
  • 1 tbsp cumin seeds
  • 3 cooked chicken breasts, finely chopped or shredded
  • chopped coriander
  • chopped mint
  • ½ cucumber, peeled into ribbons
  • 1 egg, beaten
  • 150ml milk
  • 100g mango chutney
  • 2 tsp mild curry powder
  • 75g mayonnaise
  • 150g pot natural yogurt
  • 225g self-raising flour, plus extra for dusting
  • lemon juice
  • salt
  • 1 small red onion, thinly sliced

Method

  1. Pre heat oven to 220C/200C.
  2. Add flour, salt and baking powder and mix well.
  3. Rub butter into the mixture until it looks like breadcrumbs.
  4. Add milk and cumin seeds and mix.
  5. Knead to mix extra crumbs.
  6. Spread a layer of flour onto surface and separate dough into thickness of about 1.5cm.
  7. Use a biscuit cutter to make circles of the scones.
  8. Put onto baking trays and glaze with egg.
  9. Bake for about ten 12 minutes until golden brown.
  10. Set aside to cool.
  11. Prepare filling by mixing together chicken, chutney, curry powder, yogurt, mayo, herbs, lemon juice and additional seasoning.
  12. Cut scones in half and add chicken, cucumber and red onions.
  13. Enjoy!
